Red Sweet Topper

Orange Blossom Jam for Arabic Sweets (replacement for flowers)

Ingredients:

1/2 cup granulated sugar

1 1/2 tablespoon rose water

1 1/2 tablespoon orange blossom water

1 1/2 tablespoon water

1 cup grated carrots, about 2 medium carrots

10 drops red food coloring

1 teaspoon lemon juice

Directions:

  1. Wash and peel skin of carrots. Then dry with napkin.

  2. Grate carrots using the large hole in a stainless steel grater.

  3. In a small saucepan, add sugar and 3 waters. Mix and bring to a boil over a stove top.

  4. Lower the heat to low once boil, add the grated carrots and incorporate with the sugary water.

  5. Add 10 drops of red food coloring, mix it well.

  6. Add lemon juice, mix it well.

  7. Let it simmer for 20 min. to allow the carrots to swell and incorporate the color. (It will get darker after 20 min.)

  8. Remove from heat, and spoon into a heat proof glass jar. If you want less of the syrup, use a sieve but reserve 1 tablespoon to add back into the jar.

  9. Once cooled, place in fridge to use throughout the month. You can use by picking a few pieces and placing it on top of sweets I'll share through coming posts.
