Farmhouse Salad
This salad is a Bertucci’s copycat recipe for their farmhouse salad. It’s really refreshing and I hope you enjoy it. It’s important for this salad to make it petit dice. There is something about petit dice that makes this salad perfect.
Recipe:
1 Romaine Lettuce, chopped
1 green pepper, petit diced
1 purple onion, petit diced
2 Lebanese/ Persian cucumber, petit diced
1 cup cherry tomato, sliced
1/2 cup pearl mozzarella, drained from liquid
1/4 cup pitted blacked olives, roasted in the oven with oil
Dressing:
4 oz. olive oil
1 oz. balsamic vinegar
1 large clove garlic, crushed to fine paste
2 tsp dijon mustard
2 tsp honey
1/2 tsp salt and pepper
Balsamic Glaze for drizzling
Directions:
In a container or dressing bottle, add all the dressing ingredients and mix really well.
Wash all the salad ingredients and chop or dice according to instruction above.
In a small pan add the pitted black olives with a drizzle of oil and roast at 400 F for 5 minutes.
In a salad bowl, add a layer of lettuce. Then petit dice the vegetables and layer then in a row on top like the photo above.
Add the dressing on the salad than drizzle with the balsamic glaze.
