Tropical Tiramisu

Recipe:

2 cups Heavy Whipping Cream, cold

1 cup powdered sugar

1 tsp vanilla paste

1 8oz. Mascarpone Cream, room temperature

20-25 Italian lady fingers

1 cup pineapple juice

1 cup mango, diced (fresh or canned)

1 cup pineapple, diced (fresh or canned)

1/2 cup shredded sweetened coconut

Directions:

  1. Place heavy whipped cream, powdered sugar and vanilla in a bowl and whip using a stand mixer or an electric hand mixer until soft peaks.

  2. Then add the mascarpone cream and whip for 2 min. or until thick/ stiff peaks. Place aside or in the fridge if weather is hot.

  3. Prepare and dice mango and pineapple or drain if using canned fruits.

  4. In a small deep dish or pyrex, dip a lady finger in the pineapple juice generously and place in the deep dish.

  5. You can also place the lady fingers in the dish a pour half of the juice. But make sure you get all sides. (Note: pineapple juice isn't like coffee so you have to be generous when you dip)

  6. Place a layer or your cream on top of the pineapple dipped lady fingers in the deep dish, then top with a layer of fruit.

  7. Place another layer of pineapple juice dipped lady fingers, then cream, then top with the shredded sweetened coconut.

  8. Allow at least 6 hours for lady finger to moisten or it's even better overnight. Make sure you cover well if you will eat it the next day. Enjoy!
