Lebanese Shish Tawook

Recipe:

2 lbs Chicken Tender (cleaned with lemon and vinegar, cut into cubes)

Shish tawook marinade:

1 cup yellow onion, shredded

2 garlic cloves, minced

1/4 cup ketchup

1 tablespoon greek yogurt

2 tablespoon neutral oil (canola or avocado oil)

1/4 tsp black pepper

1/2 tsp salt

3/4 tsp shish tawook spice (we purchase a premix from Lebanon or you can find one online here Shish Tawook Spice Blend )

Directions:

1. Clean and cut your raw chicken, then soak in lemon slices or lime slices (squeeze out the juice) and 1 tablespoon of white vinegar.

2. In a blender, remove skin from onion and cut into cubes, remove skin from garlic and add to blender. Then ketchup, yogurt, oil, and spices to the blender and blend until you get a puree.

3. Drain and remove lemon slices from the cut chicken. Place the chicken in a bowl.

4. Add the marinade mixture from the blender on to chicken, mix well until all the chicken are soaked in the marinade.

5. Cover and let the chicken marinate in the fridge for 3 hours or overnight. Insert into skewers for a BBG, or simply place in a pan covered with aluminum foil in the oven at 400 F for 45 min or until fully cooked. Then uncover and broil for 5 min.

Quick Garlic sauce:

1 cup mayo

1 tsp crushed garlic

Mix together in a bowl.

You can serve this shish tawook in a salad bowl, with rice, with fries, or as a sandwich with lettuce, pickles, and tomatoes.
