Mujadara with crispy onions
Lentil Rice Recipe:
1 cup diced yellow onion
1 cup sliced yellow onion, for onion topping (2 tablespoon flour and 1 tsp salt for crispy onion topping, optional)
1/2 cup cooking oil
3 tablespoons olive oil
1.5 cups brown lentils ( I used Pardina Lentils, soak it with 4 cups of water for 30 minutes)
1.5 cups long grain rice ( I used uncle ben's, wash it with water and drain)
1 tsp salt or as desired
3 cups of water to cook lentils and rice (add 1 additional cup if lentils soaks most of the water before adding the rice, if you find the water comes to the top after you add the rice then don't add water)
Fattoush: Mince: Lettuce and parsley. Dice: tomatoes, onion, green pepper, cucumber. Dressing: 1 lemon, 1/4 cups olive oil, salt, 1 tsp dried mint, and 1 tsp crushed garlic.
