Chocolate Cookie
Recipe: (for 7 cookies)
1/2 cup unsalted butter (1 stick), browned
1/2 cup dark brown sugar
2 tbsp granulated sugar
1 egg, room temp.
1 tsp vanilla
1 cup flour
1 tsp espresso powder
1/2 tsp baking soda
1/2 tsp salt
2 cups chopped chocolate or chips
Directions:
Mix flour, espresso powder, salt and baking soda in a bowl and set aside.
In a pan (that is light in color) add butter and place it on medium heat until it melts, then raise the heat and keep mixing it until you see brown bits at the bottom of the pan.
Immediately remove the butter and pour into a heat-proof bowl. Let it cool down for 10 minutes.
Add dark brown sugar and granulated sugar on top of the butter and whisk well until the sugar melts.
Crack the egg on top of the sugar mixture and continue to whisk until the mixture is creamy. Use this method: whisk for 30 seconds then let it rest for 30 seconds, repeat this 4 times. Then add vanilla.
Add the flour mixture that you set aside on top of the wet mixture and fold the dough together.
Add the chopped chocolate to the dough and mix well.
Divide the dough into 7 balls and let it rest for 1 hour to allow the flour to hydrate in the fridge.
With your fingers, shape the dough into a small mountain. This will help you get a chewy center.
Bake in the oven at 375 F on a baking sheet with parchment paper for 13-15 minutes.
Remove from the oven and let it cool in the baking sheet for 20 minutes then enjoy! or eat immediately if topping with ice cream.
