Berry Tiramisu

This beautiful Berry Tiramisu is the best easy summer treat. So fresh and creamy! You can't go wrong with this one. Here is the recipe for you my lovely friend, enjoy!


For strawberry liquid:

2 cups frozen or fresh strawberries, washed and leaves removed

3/4 cup water

1/2 cup granulated sugar

For Mascarpone Whipped Cream:

1 cup Heavy Whipping Cream

1/2 cup powdered sugar

1 tsp vanilla paste

1 8oz. Mascarpone Cream

Berries:

1/2 cup sliced strawberries

6 strawberries sliced in half for topping

1/2 cup blueberries

1/2 cup raspberries

20-25 Italian lady fingers

* You can add any of your favorite berries in the portions you love, the recipe is very flexible.

Directions:

  1. Place the strawberries, sugar, and water in a saucepan. Mix well and place over medium heat until the water starts to boil and the sugar has dissolved. Mash the strawberries in the saucepan with a potato masher or a fork to release it's juice.

  2. When the strawberry is tender, strain the juice of the strawberry in a strainer into a bowl and place the strawberry juice on the side until it cools a bit.

  3. Place heavy whipped cream, powdered sugar and vanilla in a bowl and whip using a stand mixer or an electric hand mixer until soft peaks.

  4. Then add the mascarpone cream and whip for 2 min. or until thick/ stiff peaks. Place aside.

  5. Prepare, wash, and dry your fruit and get ready to assemble.

  6. In a small deep dish or pyrex, dip a lady finger in the strawberry juice generously and place in the deep dish.

  7. You can also place the lady fingers in the dish a pour half of the juice. But make sure you get all sides. (Note: strawberry juice isn't like coffee so you have to be generous when you dip)

  8. Place a layer or your cream on top of the strawberry lady fingers in the deep dish, then top with a layer of fruit.

  9. Place another layer of strawberry juice dipped lady fingers, then cream, then top with fruit and decorate.

  10. Allow at least 6 hours for lady finger to moisten or it's even better overnight. Make sure you cover well if you will eat it the next day. Enjoy!
