Chicken Mascarpone Pizza

Ingredients: (makes 3 heart pizzas)

Dough Recipe

2 cups water, room temp.

1 tsp sugar

1 tbsp instant yeast

1 tbsp olive oil

1 tbsp canola oil

1 tsp salt

4 cups all-purpose flour and 1/4 cup AP flour for dusting

Marinated Chicken

3 chicken breasts

2 tbsp olive oil

1 tbsp lemon juice

1 tbsp Italian seasoning

1/2 tsp paprika

1 tsp dried basil

Toppings

8 oz. Mascarpone cheese, room temp.

1/4 cup sundried tomato in oil

1 yellow onion, sliced and caramelized

1/4 cup pesto

1 tbsp. cooking oil for onions

Directions:

Prepare the toppings beforehand:

  1. Marinate the chicken. In a bowl, add the chicken breast and all the marinade ingredients. Mix well and set aside in the fridge. When ready to make the pizza, cook in a pan on medium heat, then remove and cut into cubes.

  2. In a small saucepan with a lid, add the 1 tbsp. cooking oil and the sliced onions. Then sauté on low heat until the onions are soft and browned. (You will not need to add anything to it because yellow onion is already sweet and the sugar in it will help it brown.) This could take 20 min. Turn the heat off and let cool.

Make dough: Place water in a bowl and add the sugar, then the yeast. Wait 5 min. for the instant yeast to activate. (It’s supposed to make a foam, if it doesn’t make a foam then check the expiration of your yeast). Place oils in the water, then the salt. Then slowly add the flour while you mix by hand or by using a stand mixer on medium speed. Mix until the flour is incorporated completely. Cover the bowl with a towel or cling wrap and set aside for 1hr. You can also let it rest overnight in the fridge or up to 3 days.

When the dough rises make it into 6 balls. Get 2 dough balls and place them next to each other. Pinch them on the bottom together and spread the tops to the side. Continue to stretch with your hand and roll until you have a heart shape.

Place the dough on a parchment paper carefully.

Then spread the mascarpone cheese on the dough with a spoon or spatula. It will be easier if the mascarpone is left out of the fridge to come to room temperature.

Then add the caramelized onions, sundried tomato, and chicken.

Pre-heat your oven to 450F. Once the oven reach that temperature. Then place pizza with the parchment paper on a tray. Bake on the lowest rack for 10 min. After 10 min. Bake it on the top rack for another 8 min. Broil on high for 2 min. if it didn’t get a golden top.

Remove pizza off tray and into a serving dish. Then drizzle pesto using a squeeze bottle or a spoon.
